2017 Foods Prep – Week 12

Hello Pals!


Time for another round of food prep. Again in January I decided to seriously target on undertaking at the very least a minor food prep each and every 7 days even if I did not feel like it. So much I’ve manufactured it 12 months in a row! Here’s what I did final weekend carrying a fussy baby:



I manufactured:


  • Quick Pot Beef Stew

  • Sweet Potato Protein Cookies

  • Salsa Verde Chicken Casserole

  • Lemon Power Balls

  • Crockpot Honey Garlic Chicken Thighs (to fall off for a friend with a new baby. I also manufactured her some Freezer Chicken Tenders for her toddler and some Lactation Cookies)

  • Hummus Topping

  • Waffle French Toast (just french toast manufactured on a waffle maker

  • Oven Baked Bacon (400 degrees for about 12 minutes)

  • Sweet Potato Bites

  • Cucumbers & Lettuce

On Monday I manufactured this Quick Pot Shredded Hummus Chicken so I could just take shots. We ate individuals wraps for lunch on Monday and then I ended up placing the leftovers on tortilla chips and incorporating some of the hummus topping to make Greek-Type Nachos for quite a few meals during the 7 days!

I have to confess, however. The chicken does not brown in the oven incredibly considerably and produced for unappetizing shots. To proper that, I seared the chicken breasts in a pan and then completed cooking them in the oven with the marinated mushrooms. Nutritious Reduced Carb Chicken Recipe with Marinated Mushrooms

A nutritious small carb chicken recipe that's baked in the oven with Balsamic marinated mushrooms. 

Servings: four

Energy: 351 kcal

Elements

  • four boneless skinless chicken breasts (5 oz each and every)
  • one tbsp avocado or olive oil
  • salt and pepper
  • one pound whole mushrooms, washed and quartered
  • one/2 little purple onion, sliced (2 oz)

Balsamic Dressing

  • one/four cup avocado or olive oil
  • one tbsp balsamic vinegar
  • one tbsp pink wine vinegar
  • one tbsp h2o
  • one/2 tsp Dijon mustard
  • one/2 tsp Sukrin :one (Swerve Granulated, or sugar if not small carb)
  • one tsp refreshing thyme leaves
  • one pinch each and every of salt and pepper

Directions

  1. Preheat the oven to 350 degrees F. Gently pound the chicken with the flat facet of a meat mallet to even it out a minor. (I spot mine in a plastic bag to do this.) Position the chicken breasts in a 9 x 13 inch baking dish. Pour the tbsp of oil over the chicken and oil equally sides of each and every breast. Season equally sides of the chicken with salt and pepper.

  2. Clean the mushrooms and cut them into quarters. Thinly slice the onion. Position the mushrooms and onions in a little bowl. Measure the elements for the balsamic dressing in a little jar and shake to mix. Pour the dressing over the mushrooms and onions and toss to coat. 

  3. Position the chicken in the oven and cook dinner for 10 minutes. Add the mushrooms to the pan all-around the chicken and cook dinner for twenty - 30 minutes more. 

Recipe Notes

I typically place the chicken in the oven when I make the balsamic dressing and cut the mushrooms and onions. It normally takes me approximately 10 minutes and then I insert the mushrooms to the baking dish with the chicken.
